These easy Halloween Cake Truffles turn leftover cake into fun bite sized treats coated in candy and decorated with spooky sprinkles. Vegetable oil or paramount crystals(if using candy melts)
Instructions
Place a sheet of parchment paper on a baking sheet. Set aside for the rolled cake balls.
Add the prebaked cake to a food processor. Pulse into fine crumbs. If not using a processor, crumble in a large bowl with clean hands or a fork until the texture is very fine. If your cake was refrigerated, let it sit at room temperature for about 15 minutes before crumbling.
Transfer crumbs to a large bowl. Squeeze a handful to make sure it holds together. Continue crumbling if needed until the texture is uniform and compact.
Use a small cookie scoop to portion even mounds. Roll each scoop into smooth balls and place on the parchment lined tray.
Place almond bark or vanilla candy coating in a small microwave safe bowl. Microwave in 45 second intervals, stirring after each round until melted and smooth.
If using candy coating and it is thick or streaky, stir in 1 teaspoon of vegetable oil or paramount crystals at a time until fluid and glossy.
Working with a few at a time, place a cake ball on a fork and lower it into the bowl of coating. Turn to cover completely, then tap to remove excess coating.
Slide the coated truffle onto the parchment using a fork. Quickly add Halloween sprinkles or edible eyeballs before the coating sets.
Allow the truffles to set at room temperature or refrigerate for 10 to 15 minutes until firm. Serve once the coating has fully set.
