Add chicken thighs, Kinders Greek Blend seasoning, Salt, Pepper, Cumin, Paprika, Greek Yogurt, Lemon Juice, and Olive Oil to a bowl.
Mix well and cover
Let sit for 2 hours minimum and up to 48 hours.
When ready to cook preheat the oven to 375
For Stand Up Cooking Method
Cut large yellow onion in two large pieces.
Add the skewers to the onion
Layer chicken on skewers
Cook for 50 mins
For Layflat cooking method
Place marinated thighs onto. parchment lined baking sheet
Bake for 25 mins on one side
Bake for 20-25 mins on the other side
Once chicken is cooked, begin making the sauce.
Grate cucumber, add to several paper towels and squeeze the juice out.
Add all other ingredients to a small bowl, mix and taste for balance of flavors.
Set aside
Chop up the chicken.
Warm the pitas they layer on chicken, lettuce, tomatoes and sliced red onion or pickles. Add the sauce, serve and enjoy
Notes
I made this recipe twice. The first time the meat marinated for 48 hours, the second 12 hours, naturally the longer is marinates the better but it was delicious both times.I used the largest onion I could find for the stand up method, it continued to fall over due to the size of my thighs, I would suggest using a potato vs the onion if your thighs are on the larger side.This can be made without the skewers, I would decrease the cooking time and begin checking for your desired crispiness around 40 mins of baking.The stand up method did yield a juicer chicken-but it took longer to cook.If it falls over repeatedly just lay the chicken flat and use the flatlay method. It will still be delcious
