(spooned and leveled)

sugar

baking powder

baking soda

buttermilk
1
tablespoon
unsalted butter
melted
1
tablespoon
vegetable oil
1
large egg
Olive Oil non-stick spray
Instructions
In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.
In a medium bowl, whisk together buttermilk, vegetable oil, melted butter, and egg.
Add dry ingredients to the buttermilk mixture; whisk until just moistened. (A few small lumps are fine.)
Heat a large skillet or griddle over medium heat and spray with olive oil spray.
Spoon 1/4 cup of batter onto the skillet for each pancake.
Cook until the surface of the pancakes has some bubbles and a few have burst (about 1-2 minutes).
Carefully flip the pancakes with a thin spatula and cook until browned on the other side (another 1-2 minutes).
Serve immediately or keep warm in the oven.
Top with whipped cream and more sprinkles for extra fun!
Notes
You could also just use a quick mix and add sprinkles!
