Sub rolls of choice

chicken breasts sliced in half

heart romaine lettuce
washed, dried, chopped
Fresh grated parmesan

For garlic butter

Instructions
If making the garlic butter (add 45 mins to total time):
Make sure 1 stick of butter is coming to room temperature.
Preheat oven to 425°F. Cut head of garlic across the top
Place in sheet of foil.
Drizzle with olive oil, salt and pepper.
Bake for 30-45 minutes, garlic cloves will be golden brown.
Let sit while you work on the sandwich components.
Start here if not making garlic butter:
Preheat oven 350°F.
Slice the chicken breasts in half across the side (it will look like a butterfly)
Place each piece between a sheet of folded parchment paper and pound with a meat mallet (or rolling pin)
If your pieces will be too large, go ahead and cut it. (I ended up with 5 pieces of chicken from the 2 breasts).
Set up the breading station; flour, egg wash (see notes if you dont have eggs), breadcrumbs + grated parmesan cheese.
Season chicken with salt, pepper and a little garlic and herb seasoning (optional).
Dip in the flour, then egg wash, then breadcrumbs.
Allow to rest on a large plate or cutting board.
Prepare the rolls:
Slice and slightly hollow out sub rolls.
Spread (garlic butter or regular) butter on inside of rolls
Grate some fresh parmesan on top.
Place open side up on baking sheet.
Bake for 10-15 minutes, or until buttered tops are golden and bread is toasted.
Cook the Chicken
In a large pan, add enough oil to rise cover the bottom of the chicken breasts in the pan and preheat over medium heat.
Fry cutlets until golden brown on eat side (at least 3-5 mins per side)
Place cooked cutlets on plate lined with paper towel to absorb excess oil (for maximum crispiness-place chicken on a cooling rack)
Make the salad
To a bowl, toss chopped romaine in ceasar dressing of choice.
Add freshly shaved parmesan and mix to incorporate
Assemble
Crunchy sub roll, cutlet, salad and extra parmesan. Enjoy!
