For this recipe, you will only need two types of equipment. The first one is the parchment-lined sheet pan where the potatoes will be baked and sturdy glass or dry measuring cups to measure the volume or quantity of the ingredients needed. 

On the other hand, the following are for the ingredients:

  • Yukon gold potatoes or red potatoes. You will need one bag of these in small sizes. 
  • Salt, Pepper, Garlic powder. Prepare 1 teaspoon of each seasoning. 
  • Thyme, and Rosemary. Prepare a teaspoon for each. 
  • Olive oil. Just prepare ¼ cup.

How to Make the Easy Roasted Smashed Potatoes?

To begin the making of the roasted smashed potatoes, start by adding potatoes to a shallow dish and boil in salted water until fork-tender for 15 to 20 minutes. 

Next, drain potatoes and add to a bowl. Then, toss potatoes in seasonings, herbs, and olive oil.

After that, lay the potatoes out on a parchment-lined baking sheet and lightly smash them with a glass. Drizzle any remaining olive oil and herbs over the top of the mashed potatoes.

Lastly, bake in a 425-degree oven for 30 minutes, flipping at the halfway mark. Once done, remove them from the oven and they are ready to serve. Enjoy!

Equipment

  • Parchment lined sheet pan
  • Bowl
  • Sturdy glass or dry measuring cup

Ingredients
  

  • 1 bag small Yukon gold potatoes or red potatoes.
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 1 tsp Rosemary
  • 1/4 cup olive oil

Instructions
 

  • Add potatoes to shallow dish and boil in salted water until fork tender (15-20 mins)
  • Drain potatoes and add to a bowl.
  • Toss potatoes in seasonings, herbs and olive oil
  • Lay out on parchment lined baking sheet
  • Lightly smash with a glass
  • Drizzle any remaining olive oil and herbs over the top of the smashed potatoes
  • Bake in a 425 degree oven for 30 mins, flipping at the half way mark.
