Prep time: 15 mins Cook time: 1-2 min mins Yield: 5-6 servings
Ingredients
2 eggs
1 tbsp water
1/4 cup white sugar
1/2 cup milk
2 tsp vanilla
2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 tsp cinnamon
3–4 cups canola or vegetable oil
Powdered sugar
Optional Toppings: Powdered sugar, fruit, chocolate sauce, glaze or cinnamon sugar
Instructions
With a hand or stand mixer whip egg, milk, water, sugar, and vanilla until frothy. Whisk together cinnamon, salt, flour, and baking powder. Slowly add dry ingredients to the wet to create a thick batter. Add batter to piping bags
Heat oil over medium high heat (about 390 degrees) Test the oil by sprinkling a little bit of flour, when it sizzles the oil is hot enough. Whatever you do, don’t sprinkle water into hot grease trying to test it.
Carefully, Pipe “fry sized” 2-3 inch lines of batter into the hot oil you may have to use your fingers to break the batter off. Fry on both sides until golden brown for about 45-60 seconds. Remove and let drain on paper towels for 1-2 mins Dust with powdered sugar or other toppings. Serve immediately and enjoy
Notes:
This recipe can be used to make funnel cakes. Reduce the flour in half for a crispy funnel cake.
if the batter is too thick for you handle add 1 more tablespoon of water. We don’t want this runny
but we don’t want it too thick for you to stir
If the batter is taking longer than 1-2 mins to fry your oil is not hot enough. You may need to reduce the amount of batter you are adding at a time. We want these to cook pretty quickly so you aren’t left with an oily taste in your mouth.
The batter is NOT very sweet. The sweetness comes from your toppings.
Quick strawberry glaze:
1 spoonful of Strawberry jelly or preserves.
1 tbsp milk
2 tbsp powdered sugar
Add to bowl. Stir well. Drizzle over top or use as a dipping sauce
Pour over the top, serve and enjoy!
