How to make easy Breakfast Potatoes
Breakfast potatoes are literally one of my favorite “cheap” meals ever. While they are considered breakfast style I’ll show you how to take this same recipe and make it for dinner!
What are Breakfast Potatoes?
Breakfast potatoes are chopped red and gold potatoes, tossed in seasonings with onions, peppers, and oil or butter. It’s a quick and cheap meal to prepare for meal prep or a nice brunch with friends. It’s filling and delicious and can be made in a variety of ways.
Do I need to soak my potatoes in water?
It is definitely good practice to soak the potatoes! Soaking the potatoes in COLD water helps remove excess starch. This excess starch can keep the potatoes from cooking evenly and will make the potatoes gummy or sticky on the outside.
Can I cook this in a crock pot or slow cooker?
This is my favorite way to prepare breakfast potatoes. It’s a wonderful meal to throw in the crockpot while working from home or when stepping out for a few hours. I cook on low for 3.5-4 hours. Depending on how much I’m cooking at once.

What You’ll Need to Prepare the Breakfast Potatoes:
Small potatoes: I like red or gold potatoes. If using a Russet potato make sure you soak them first. (explained above)
Seasonings. Seasoning Salt, Garlic Powder, Italian seasoning, paprika, salt & black pepper
Butter or Olive Oil: Unsalted butter or extra virgin Olive oil is acceptable in the oven or crockpot. I’ve only ever tossed them in olive oil when using the air fryer (video below).
Foil: This helps steam the potatoes by trapping all the heat inside. I will tightly pack them in aluminum foil using the oven, grill, or crockpot.

Ingredients:
- 2-3 large potatoes
- 1/2 onion, diced
- 1 bell pepper, diced
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions:
- Wash and dice the potatoes into small cubes.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the diced potatoes, onions, and bell pepper to the skillet and stir to combine.
- Sprinkle the paprika, garlic powder, salt, and pepper over the potato mixture and stir again.
- Cook the potatoes for 20-25 minutes, stirring occasionally, until they’re golden brown and crispy on the outside and soft on the inside.
- Serve hot and enjoy!
Tips and variations:
- For a spicy kick, add a dash of cayenne pepper or chili powder to the seasoning mixture.
- Feel free to use any type of potato you prefer, such as red or Yukon gold potatoes.
- Add your favorite breakfast meats, like bacon or sausage, to the skillet to make it a heartier meal.
- Top the potatoes with shredded cheese, sour cream, or green onions for an extra flavor boost.
Can I add meat?
Absolutely! I love cutting up smoked sausage and adding it to this dish. You can eat it just like that or scramble some eggs and add some biscuits. Either way, it will be delicious.
